Sloppy Joes...new and improved

Here's a Monday funny I lost a windshield wiper driving down I-95 today...while it was raining. Praise the Lord it was the passenger side. I'm praying this is no hint of how the rest of my week will be.


Okay so we all know of man which right delicious when you were a kid but now maybe not to much. Well I found a recipe for Grown up sloppy joes! And they are super easy and super delicious...here's the recipe

You will need:
1lb ground turkey( or chicken)
3 large carrots washed and peeled
1 yellow onion chopped
1 small can of organic Tomato paste
3/4 cup water
Oregano
Cumin
Pepper
Paprika
Chili powder
Cilantro
2 tbs honey
And of course buns...I went with Rudis while wheat organic they are good.


Okay so first,
shred the carrots I use a potato peeler and Chop the onion
-toss them in a skillet with a little bit of grape seed or olive oil.
-sautée them until the onions are transparent(kinda see through)
-add the turkey and brown it
-add the spices
-mix it all up
- in the mean time take the tomato paste and mix it with the water and cilantro(I forgot the cilantro an it was still good)
-once its all mixed add it to the meat and veggies
-add the honey
-serve on the buns (toast if ya want or refrigerate for later)

See, so so easy...side dishes
Corn on the cob
Or a salad
Fruit

***with the spices I just added what my personal preference is for amounts but if you want a gauge 1-2 tsp per***
