Enjoying all of Fall


Fall colors from around my Apartment





So this week/weekend has been pretty awesome...The colors of fall are in full season here and it is sooo pretty, I also got to go see my BFF Kelsey for her Birthday and go to the USC vs Florida game...unfortunately my gators lost BUT I still had a wonderful time meeting some fabulous new people and getting to see my BFF.

Next week is Thanksgiving which kinda marke the end of fall here because people are already Christmas decorating...(I am guilty or stringing some lights on my porch as well) But do not worry I made some pumpkin bread today and it smells delicious...I looked up a healthier recipe im order to make up for all of the birthday cake I had this weekend.

I also stopped to enjoy the color of the leaves changing it is amazing the colors and how it all goes from green to yellow and red Absolutely Amazing...

On my way back from USC I drove home while looking at a harvest moon the whole way....so beautifulHere goes the Pumpkin Pie recipe

Healthy Pumpkin Pie:
-1 cup of light brown sugar
-2 egg whites
Whisk together in large bowl
-1 cup pure pumpkin (not pumpkin pie mix)
-1/4 cup canola oil (or vegetable)
-1/3 cup low fat plain yougurt
-1 tsp of vanilla extract
add this to the brown sugar and egg mixture
in a seperate bowl combine these
-1 cup all purpose flour
-3/4cup wheat flour
-1 1/2 tsp baking powder
-1 tsp ground cinnamon
-1/2 tsp ground nutmeg
-1/2 tsp baking soda
-1/2 tsp salt
slowly add these to the liquid mixture do not overstir once they are blended well pour into 8 1/2 by 4 1/2 loaf pan bake at 350 deg for 45 min to 70 min depending on baking dish (glass take a bit more time than metal for some reason)
